Walking into a Chinese restaurant can be an exhilarating experience—the aromas, the lively atmosphere, and then… the 菜单 (càidān) - menu arrives. Filled with beautiful but sometimes mysterious characters, it can feel daunting. Don’t worry! With a few key pieces of vocabulary, you can move from confused to confident and 点菜 (diǎn cài) - order dishes like a pro.
 
Start with the Structure: Menu Sections (部分 - bùfen)
Chinese menus are often logically divided. Look for these headings:
主食 (zhǔshí) - Staples: This is where you’ll find 米饭 (mǐfàn) - rice, 面条 (miàntiáo) - noodles, and 饺子 (jiǎozi) - dumplings.
荤菜 (hūncài) - Meat Dishes: The section for poultry, pork, beef, and lamb.
素菜 (sùcài) - Vegetable Dishes: Your go-to for delicious vegetable-only plates.
汤类 (tānglèi) - Soups: From simple egg drop soup to hearty broths.
饮料 (yǐnliào) - Drinks
 
Crack the Dish Name Code
Dish names often follow a pattern: Cooking Method + Main Ingredient + (Secondary Ingredient/Feature). Learn these core elements:

炒 (chǎo) - stir-fried (e.g., 炒牛肉 - stir-fried beef)
煮 (zhǔ) - boiled
烤 (kǎo) - roasted/grilled
炸 (zhá) - deep-fried
蒸 (zhēng) - steamed
 
Key Ingredients & Flavors:
鸡 (jī) - chicken, 牛 (niú) - beef, 猪 (zhū) - pork, 鱼 (yú) - fish
豆腐 (dòufu) - tofu

Pro Phrases for Ordering
Arm yourself with these simple sentences to interact with your 服务员 (fúwùyuán) - server:
"请问,这个辣吗?" (Qǐngwèn, zhège là ma?) - "Excuse me, is this spicy?"
"我们要..." (Wǒmen yào...) - "We would like..."
The most basic way to order. Point and say "我们要这个" (Wǒmen yào zhège - We want this one).
"有什么推荐吗?" (Yǒu shé me tuījiàn ma?) - "Do you have any recommendations?"
"不要放..." (Bù yào fàng...) - "Please don't put in..."
Useful for dietary restrictions. E.g., "不要放花生" (Bù yào fàng huāshēng) - "No peanuts, please."
